Abstract

One of the implementations of the food diversification program is realized by innovation with local food. This is to encourage the emergence of food consumption habits by utilizing local food resources. Pasir Eurih Village, Muncang District, Lebak Regency is a village that has local foodstuffs, namely cassava. The condition of the distance from the village is far from the centre of Muncang District, making the lack of food diversification training and food access to the market very far. For this reason, this service activity aims to encourage and increase public knowledge related to diversification and provide training on local food innovations from cassava into donuts that are beneficial to the community. This community service activity was carried out with a training method and direct practice of making cassava food innovations into donuts. The target of this activity is the Posyandu member group. The results of the service activities showed good enthusiasm, although when conducting the pre-test it was known that public knowledge related to cassava as a substitute for rice was still minimal. Another finding is that community participation in this food diversification training activity can be realized when there are training opportunities that they get, communication, coordination and good cooperation between government levels to initiate training. This training also provides inspiration for the community to be able to see business opportunities from the results of local food processing innovations.
